Roasted sweet potatoes with creamy green adobo sauce
The sweet potatoes, caramelized to perfection, provide a delightful contrast to the velvety texture and bold, smoky notes of the adobo sauce.
Ingredients
- 2 medium sweet potatoes
- 2-3 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- pinch of salt
- 1 Jalapeno
- 1 garlic glove
- 1/2 C cilantro
- 1/2 C parsley
- 1/2 tbsp fresh lime juice (about juice from 1/2 lime)
- 1/4 C full fat greek yogurt
- 1 tbsp honey
- 4 tbsp olive oil
Instructions
Prep and make your sweet potatoes
Preheat your oven to 400 degrees. Scrub your potatoes and cut them lengthwise into wedges. In a medium sized bowl, toss the potatoes with olive oil, paprika, garlic powder, and salt. Place on a lined sheet pan and arrange them so they're flat on the pan to make sure they are getting a nice crisp. Cook for 25-30 minutes.
Make your adobo sauce
While your potatoes roast, make your adobo sauce. Toast your jalapeno on a small nonstick pan over low/medium heat for about 10 minutes. Rotate the pepper every 2-3 minutes so all sides are blistered and softened. Once 10 minutes are up, cut lengthwise and spoon and discard the seeds. In a food processor add in all your ingredients -- including the jalapeno - but not the olive oil. Blitz and slowly add your olive oil about one tbsp at a time until you reach a creamy consistency and all your ingredients have blended together.
When your sweet potatoes are ready, drizzle on your adobo sauce. Add finishing salt and a squeeze of lime if needed. Enjoy!
